This is another healthy snack for the whole family, using cassava. It also includes some vegetables and herbs to add colour, texture and flavour, as well as to improve the nutritional value of the snack.

Cut peeled cassava into big chunks. Boil in a saucepan or pressure cooker till done. Once done, drain and mash into a bowl using a fork or a master.

Prepare the vegetables and coriander as indicated in the ingredients list. Add to the mashed cassava. Add turmeric, salt and pepper. Mix well.

Shape mixture into small rounds and then flatten (between palms) to form patties.

Heat a small amount of oil in a non-stick frying pan over medium heat.

Once the oil is hot, add the patties. Cook the patties until the bottom is golden brown (3-4 minutes). Then, carefully turn each patty and cook on the other side until brown (3-4 minutes). Remove from the pan.

The patties can be served with mint chutney (‘chatini la mente’).
